For Europeans: what's the best place to stake your stablecoins?

I'm new to cryptocurrency and having read lots of information here on the subreddit has made me confused, specially since most of it applies to the US. So I'm posting this in the hopes that anyone living in Europe can shed some light on where to stake your stablecoins, and also what methods do you use to earn passive income from your crypto in general. I've heard about Coinbase and Binance but there's just too many options to choose from. Just looking for people's experiences to get a head start.
